Step 1
Pour a teaspoon of olive oil into your slow cooker, then lay the sliced onions on top. Place the pork roast right over the onions. Let it cook on low for about 8 to 9 hours, until the pork is really tender and easy to shred. Once itβs done, take the roast out and set it on a platter, discarding the onions and any liquid left behind. Use two forks to pull the pork apart into shreds.
Step 2
Heat the remaining two tablespoons of olive oil in a large pot over medium heat. Add the chopped onion, garlic, and a pinch of red pepper flakes, cooking and stirring until the onion turns soft and translucentβthis should take around 5 minutes. Toss in the shredded pork along with the tomato paste, molasses, brown sugar, Worcestershire sauce, balsamic vinegar, salt, and pepper. Stir everything together until it's well combined.
Step 3
Lower the heat, cover the pot, and let it simmer gently. Keep an eye on it and stir every now and then until the sauce thickens up nicely, which should take about 30 minutes. Once it's all set, itβs ready to serve!
