Why This Recipe Is So Delicious
Pro Kitchen Tips
- Be sure to scoop out the seeds carefully to create enough space for the filling.
- If you want a crispier top, sprinkle some breadcrumbs or cheese on before baking.
Step 1
Lightly heat your oven to 350°F (175°C) and lightly grease a 13x9 inch baking dish. Slice the zucchinis in half lengthwise and scoop out the seeds with a spoon. Chop up about three-quarters of those seeds and set them aside for the filling. In a medium bowl, combine the ground beef, sausage, chopped onion, bread crumbs, egg, and the chopped zucchini seeds, mixing everything well. Pile this meat mixture generously into each zucchini half and arrange them in your baking dish.
Step 2
Mix together the crushed tomatoes, tomato soup, and water in a separate bowl. Pour this sauce over the stuffed zucchinis, making sure they’re nicely covered. To catch any drips, you might want to place a sheet of foil or a cookie tray under the baking dish. Pop it in the oven and bake for about 45 minutes, until everything is cooked through and bubbly. Let it cool a bit before serving, and enjoy!
