Step 1
Warm some olive oil in a large pot over medium-high heat. Add the ground turkey and cook it, breaking it up with a spoon, until itβs nicely browned and no longer pink. Once cooked, scoop the turkey out into a bowl and set it aside.

In the same pot, toss in the chopped onion and cook it until itβs just starting to turn translucent, about 5 minutes. Then add the carrots and celery, cooking everything together until the veggies are tender, which should take another 8 minutes or so.

Stir in the corn, minced garlic, taco seasoning, cumin, chili powder, dried oregano, and about a quarter cup of chopped cilantro. Add the cooked turkey back into the pot and cook everything together for a couple of minutes until the spices smell really fragrant.

Now itβs time to add the diced tomatoes, kidney beans, chopped green chile pepper, olives, chicken broth, water, and a squeeze of lime juice. Season with salt and pepper to taste. Bring the stew to a boil, then lower the heat and let it simmer gently for about 20 minutes.

Before serving, fish out the chile halves. Sprinkle the remaining chopped cilantro on top for a fresh finish, and enjoy!
