Step 1
Lightly heat your oven to 350Β°F (175Β°C) and lightly grease a casserole dish. Bring a pot of salted water to a boil and cook the cauliflower, potatoes, and garlic cloves for about 5 to 7 minutes until theyβre just starting to get tender. Drain well, then spread them out evenly in the casserole dish. Season with a little salt and pepper, and sprinkle the peas on top.
Step 2
Make the sauce by melting butter in a small saucepan over medium heat. Stir in the flour and cook it for a minute or two, then slowly whisk in the vegetable stock and milk. Keep stirring until the sauce thickens and is nice and smooth. Add the Swiss cheese a handful at a time, letting it melt completely before adding more. Season the sauce with curry powder, salt, and pepper to taste.
Step 3
Pour the cheesy curry sauce over the veggies in the dish and cover everything with foil. Pop it in the oven and bake for about 20 minutes, until the vegetables are tender and everything is heated through. Serve it warm and enjoy!
