Step 1
Heat a large pot over medium heat. Add the ground sirloin, a splash of water, and chopped onion. Cook everything together, stirring occasionally, until the onion softens, which should take about 3 minutes. Season with a bit of salt and pepper. Keep cooking until the beef is just starting to brown, around 2 to 3 more minutes.

Toss in the cubed sirloin and garlic. Stir frequently and cook until the onions turn translucent but don’t let them brown, about 3 to 5 minutes.

Now it’s time to add the diced tomatoes, kidney beans, tomato paste, green chiles, and all the spices — chili powder, cilantro, cumin, ginger, curry powder, and cayenne pepper. Give everything a good stir, bring the mixture up to a boil, then cover the pot and lower the heat to let it simmer gently.

Let it cook for about 30 minutes, stirring now and then. After that, season with salt and pepper to taste, then keep it simmering for at least another couple of hours so all the flavors really come together.
