Warm your oven to 350Β°F and lining a 12-cup muffin tin with paper liners. In a big bowl, whisk together the flours, baking powder, baking soda, and salt. In a small saucepan, melt the butter, then stir in the peanut butter and brown sugar until everythingβs smooth. Take the pan off the heat and mix in the milk, egg, and vanilla extract. Pour this wet mixture into the dry ingredients and stir just until combined. If the batter feels a little thick, add a splash of milk, a tablespoon at a time. Gently fold in the chopped apple and peanut butter chips so theyβre evenly spread throughout the batter.
