Step 1
Gently heat a large skillet over medium-high heat and brown the pork chops for about 2 minutes on each side. Once theyβre nicely browned, set them aside. Next, preheat your oven to 350Β°F (175Β°C).
Step 2
In a 9x13 inch baking dish, spread out the apple slices evenly. Sprinkle them with brown sugar and cinnamon, then dot with small pieces of butter. Place the browned pork chops on top of the apples and season everything with a little salt and pepper.
Step 3
Pour the sherry over the whole dish, cover it, and pop it into the oven. Let it bake for about an hour, or until the pork is tender and reaches an internal temperature of 145Β°F (63Β°C). Once done, take it out and let it rest a few minutes before serving.
