Step 1
Warm your grill to high. Meanwhile, warm a tablespoon of olive oil in a large pot over medium-high heat. Toss in the onions and cook them until they’re nicely browned, about 6 to 8 minutes. Add the grits and 6 cups of water, then reduce the heat to medium-low. Stir occasionally as the grits absorb the water and become tender, which should take around 20 to 25 minutes. Once cooked, whisk in the cheese and season with salt and pepper. Keep the grits warm while you finish the shrimp.
Step 2
Lay a piece of heavy-duty aluminum foil on the hot grill. In a bowl, mix the shrimp with paprika, cumin, and the remaining 3 tablespoons of olive oil until they’re well coated. Arrange the shrimp on the foil and grill them for about 3 to 4 minutes per side, until they’re nicely browned and cooked through.
Step 3
Finally, drizzle the BBQ sauce over the shrimp and give everything a good toss to coat. Serve the saucy shrimp over the cheesy grits and enjoy!
