Step 1
Combin the shrimp, crawfish, crushed crackers, chopped scallions, eggs, diced bell pepper, mayonnaise, olive oil, dry mustard, garlic powder, cayenne, and seafood seasoning in a big bowl. Mix everything well until it’s fully combined.
Step 2
Shape the mixture into small patties—about 3 inches across and half an inch thick. Lightly coat each patty with panko breadcrumbs for a little extra crunch.
Step 3
Heat about half a cup of oil in a deep skillet over medium to medium-high heat. Once the oil is hot, carefully add the patties and cook them until they’re golden brown, which should take around 3 minutes per side.
Step 4
When they’re done, transfer the patties to a paper towel-lined plate to drain any excess oil. Serve warm and enjoy!
