Directions
Bring a large pot of water to a boil. Add the ditalini pasta and cook it, stirring now and then, for about 12 minutes until itโs tender. Once the pasta is ready, stir in the tomato sauce, cannellini beans, kidney beans, black-eyed peas, frozen green peas, corn, diced potato, carrots, chopped onion, garlic, parsley, Italian seasoning, salt, and black pepper. Bring everything back to a boil, then lower the heat and let it simmer gently for 30 to 45 minutes so all the flavors meld together. When youโre ready to serve, drizzle a little olive oil on top and sprinkle with Parmesan cheese for a nice finishing touch.
