Step 1
Place the beans in your Instant Pot and cover them with water. Close the lid, set it to high pressure, and cook for 25 minutes. It’ll take about 10 minutes for the pressure to build up. When the cooking time is up, carefully release the pressure using the quick release method, then drain the beans in a colander.

Switch the pot to the sauté setting. Add the onion, bell pepper, garlic, oil, and smoked paprika, and cook everything until the onions turn soft and translucent, about 3 minutes. Turn off the sauté function.

Put the drained beans back into the pot, then stir in the broth, maple syrup, vinegar, tomato paste, and mustard until everything is well combined. Seal the lid again, set to high pressure, and cook for another 10 minutes. After it’s done, quick release the pressure once more.

Finally, open the lid and let the beans sit for about 5 minutes so the sauce can thicken up a bit before serving.
