Step 1
Heat a large nonstick pot over medium-high heat. While it’s warming up, mince the onion and garlic by pulsing them a few times in a food processor, then add them to the pot. Next, finely chop the bell pepper in the same way and toss it in, followed by the celery. Give everything a good stir, add a couple of tablespoons of water, and let the veggies cook down until they're nice and soft, about 6 to 10 minutes.
Step 2
Meanwhile, take half of the beans and tomatoes and pulse them in the food processor until the beans are broken up but not completely smooth—you want a bit of texture. Add this mixture back into the pot along with the rest of the whole beans and tomatoes. Stir in the hot sauce, thyme, oregano, smoked paprika, salt, black pepper, and a pinch of cayenne for some heat.
Step 3
Turn the heat down to low, cover the pot tightly, and let everything simmer gently for at least 30 minutes so the flavors meld together. Make sure to give it a good stir every 5 to 10 minutes to keep it from sticking and to help everything blend nicely.
