Step 1
Lightly heat your oven to 350Β°F (175Β°C). Take your puff pastry sheets and cut each one into nine squares. Gently roll out each square so it fits nicely into a 3-inch pie pan. Press the pastry into the pans and set them on a rimmed baking sheet. To keep the edges from puffing up too much, pour a small handful of ceramic baking beads into each pastry-lined pan.
Step 2
Pop the pans into the oven and bake for about 5 minutes. While theyβre baking, whisk together the eggs, spinach, milk, ricotta, Parmesan, mozzarella, fontina, and a pinch of salt and pepper until everything is well combined.
Step 3
Once the pastry shells have had their head start, carefully take them out of the oven and remove the ceramic beads. Spoon the egg and cheese mixture evenly into each pastry cup. Bake again until the quiche puffs are set and have turned a lovely light golden color, which should take around 30 minutes. Let them cool a bit before enjoying!
