Directions
Break the ramen block into four smaller pieces and put them in a medium microwave-safe bowl. Add a handful of spinach on top. Pour in enough water to just cover the noodles. Microwave on high for about 3 and a half minutes, or until the noodles are tender and the spinach has wilted. Carefully drain out any extra water. Stir in the pasta sauce, sun-dried tomatoes, and a drizzle of olive oil until everything is well coated. Pop it back in the microwave for about 30 seconds to warm the sauce through. Finish it off with a sprinkle of Parmesan cheese before digging in.
