Step 1
Cook the pasta according to the package instructions, but skip adding salt. While the pasta’s cooking, mix together the ricotta, Parmesan, water, and a pinch of pepper in a small bowl and set it aside.

Heat a large skillet over medium-high heat, then add the sausage and chopped onion. Cook for about 3 to 5 minutes, stirring now and then, until the sausage is nicely browned and the onion is soft. Drain any excess fat.

Stir in the undrained tomatoes, tomato paste, mozzarella (save a little for topping), and the cooked pasta. Give everything a good mix so it’s well combined.

Spoon dollops of the ricotta mixture over the pasta in the skillet, then sprinkle the rest of the mozzarella cheese on top. Turn the heat down to low, cover the skillet, and let it cook for 2 to 3 minutes until the ricotta is warmed through and the cheese on top has melted. Enjoy!
