Lightly heat a large skillet over medium-high heat. Toss in the pork and cook it until itβs nicely browned, about 6 to 7 minutes, then transfer it to a plate. In the same skillet, add the onions and peppers and cook until they start to brown, which should take around 6 to 8 minutes. Next, return the pork to the pan along with the diced tomatoes, chicken broth, and garlic. Sprinkle in the vinegar, garam masala, curry powder, salt, black pepper, cumin, mustard, basil, and oregano. Let everything simmer gently for about 10 minutes. Then, add the mushrooms and continue simmering for another 10 minutes. To thicken the sauce, mix the water and cornstarch in a small bowl, pour it into the skillet, and stir until the sauce thickens, about 2 to 3 minutes. Taste and adjust the seasoning as needed before serving.
