Tips For Better Flavor
- Avoid overmixing the batter to keep the bread light and tender.
- Check doneness with a toothpick inserted in the center; it should come out clean or with a few crumbs.
Directions
Lightly heat your oven to 325Β°F (165Β°C) and greasing two 4x8-inch loaf pans. In a bowl, mix together the flour, baking powder, cinnamon, baking soda, salt, and nutmeg. In a larger bowl, mash the bananas and then stir in the eggs, applesauce, brown sugar, flaxseed meal, milk, and vanilla until everything is well combined. Slowly add the dry ingredients to the wet, stirring just until the batter looks smooth. Toss in the walnuts and gently fold them through. Divide the batter evenly between the prepared pans and pop them in the oven. Bake for about 45 to 60 minutes, or until a toothpick inserted in the center comes out clean. Once done, take the loaves out and let them cool in the pans for 15 minutes before turning them out onto a wire rack or plate to cool a little moreβaround 5 minutesβbefore slicing.
