Why This Dish Is Hard To Resist
Cooking Techniques
- Cook the pasta just until al dente to keep it firm and avoid mushiness.
- Toss the salad while the pasta is slightly warm to help the dressing absorb better.
Step 1
Bring a large pot of salted water to a boil. Add the rotini along with a splash of olive oil, and cook it until itβs tender but still has a bit of biteβabout 8 minutes. Once itβs done, drain the pasta and give it a quick rinse with cold water to stop the cooking. Transfer it to a big bowl.
Step 2
Toss in the chopped red and green bell peppers, the Gouda cheese, and some fresh parsley.
Step 3
In a small bowl, whisk together the balsamic vinegar while slowly streaming in the soybean oil until the dressing comes together and looks nice and smooth. Stir in the dill and garlic salt for extra flavor.
Step 4
Drizzle the vinaigrette over the pasta mixture a little at a time, tossing gently until the pasta is just glossy with dressing. You might not need to use all of itβsave any leftovers for another salad or as a tasty marinade.
