Step 1
Boil a small pot of salted water. Toss in the macaroni and cook it until itβs just about tender, which should take around 6 minutes. Drain the pasta and set it aside for now.

Heat a large skillet over medium heat and crumble the turkey into it. Cook, stirring occasionally, until the turkey is nicely browned. Drain any excess liquid. Add the chopped onion to the skillet and cook everything together until the onion softens, about 5 minutes.

Stir in the diced tomatoes, gravy mix, and chili powder until everything is well combined. Then, add the corn and the cooked macaroni, mixing it all together. Cover the skillet, lower the heat, and let it simmer gently for about 10 minutes, stirring every now and then to keep things from sticking.
Step 4
When itβs ready, spoon the casserole over a bed of tortilla chips and top with shredded lettuce and a dollop of sour cream. Enjoy!
