Gently heat your oven to 350Β°F (175Β°C). In a bowl, whisk together the spelt flour, salt, cinnamon, and baking soda. In another bowl, mash the banana and then mix it with the brown sugar, shortening, applesauce, egg, and maple syrup until everything is well combined. Pour the wet ingredients into the dry ones and stir just until everything comes together. Gently fold in the oats and raisins. Scoop out tablespoon-sized portions of the dough and drop them onto an ungreased baking sheet. Bake for about 12 minutes, or until the edges turn a nice light brown. Let the cookies cool completely on a wire rack before enjoying.
