Warm your oven to 350°F (175°C) and greasing a 9x12-inch baking dish with cooking spray. Toss the bread cubes into the dish, then sprinkle the pecans evenly over the top. In a bowl, whisk together the eggs, 1 1/2 cups of milk, almond extract, cardamom, cinnamon, and brown sugar until everything is well combined.
