Step 1

Lightly heat some oil in a large skillet over medium heat. Toss in the onion and cook, stirring occasionally, until it becomes soft and translucent, about 5 minutes. Then add the mushrooms and garlic, cooking for another couple of minutes until they soften.

Finally, stir in the spinach, parsley, and a squeeze of lemon and lime juice. Cook for just another minute until everything is heated through and the flavors meld together. Serve warm and enjoy!
