Kitchen Tips
- Adjust the spice levels according to your taste; add more chili for extra heat or reduce it for a milder flavor.
- Use fresh ginger and garlic for the best aroma and depth of flavor.
Step 1
Gently heat some olive oil in a pot over medium heat. Add the chopped onion and garlic, and cook them, stirring occasionally, until they smell amazing and start to softenโthis usually takes about 2 to 4 minutes. Next, sprinkle in the red pepper flakes, turmeric, and garam masala. Stir everything together so the spices coat the onions nicely, cooking for another couple of minutes to bring out their flavors.
Step 2
Now, add the lentils and broth to the pot. Turn the heat up to bring it all to a boil, then lower the heat, cover the pot, and let it simmer gently. Cook until the lentils are tender but still hold their shape, which should take around 15 minutes.
Step 3
Once the lentils are almost ready, toss in the diced sweet potatoes. Bring the soup back to a boil, then reduce the heat again and cover. Let it simmer until the sweet potatoes are soft and the lentils are fully cookedโabout 10 more minutes.
Step 4
Finally, stir in the spinach and cook just until it wilts, about 3 to 5 minutes. Give the soup a taste and season with salt as needed. Serve warm and enjoy!
