Blend the curry powder, ginger, garlic, red pepper flakes, salt, pepper, and thyme in a large bowl. Add the chicken and toss it around until itβs fully coated with the spices. Cover the bowl and let it marinate in the fridge for at least two hoursβlonger if you have the time.

When youβre ready to cook, preheat your oven to 400Β°F (200Β°C). In another big bowl, combine the rice, mango, chopped onion, garlic, and ginger. Sprinkle in the curry, red pepper flakes, salt, thyme, whole allspice berries, and brown sugar, then give it a good stir. Pour in the water, broth, and lime juice, mixing everything together.

Transfer the rice mixture to a casserole dish and spread it out evenly. Lay the marinated chicken pieces on top, then pour the coconut milk over everything. Cover the dish tightly with aluminum foil.

Pop it in the oven and bake for about an hour. After that, take off the foil and bake for another 10 to 15 minutes to let the chicken brown a bit. Before serving, be sure to fish out the allspice berries so no one bites into one by accident. Enjoy!
