Step 1
Heat your oven to 350°F. In a large pan over medium-high heat, cook the ground turkey in a bit of oil until it’s nicely browned and crumbly, about 5 to 10 minutes. Drain any extra fat, then stir in the chicken broth and taco seasoning. Let it cook for a few minutes until the sauce thickens up a bit.
Step 2
Add the orzo to the pan and cook it with the turkey mixture for a couple of minutes until it starts to soften. Stir in the salsa, then pour everything into a 2-quart casserole dish.

In a separate bowl, mix together the muffin mix, creamed corn, and milk until it’s well combined. Spread this corn batter evenly over the turkey mixture in the casserole.
Step 4
Pop the dish into the oven and bake for about 35 to 40 minutes, or until a toothpick inserted in the center comes out clean. Once it’s done, sprinkle the Mexican cheese blend over the top and bake for another 5 minutes or so, just until the cheese melts and gets nice and gooey.
