Directions
Gently heat your oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish. Toss the sweet potatoes and carrots into the dish, then sprinkle with about a quarter cup of chopped parsley and a teaspoon of chipotle powder for some smoky heat. Pop it in the oven and roast for about 25 minutes. After that, add the bell peppers along with the rest of the parsley, and roast everything together for another 10 minutes or so, until the veggies are tender but still have a bit of crunch. Once they’re done, take the dish out and season with salt and a little extra chipotle powder if you want a stronger kick. Give everything a good stir and you’re ready to serve!
