Blend together the olive oil, balsamic vinegar, lemon zest and juice, and garlic in a big bowl. Toss in the sliced mushrooms and let them soak up all those flavors for at least an hour.

When youโre ready to cook, melt the butter in a skillet over medium-low heat. Keep stirring it until it turns a nice golden brown and smells nutty, which should take about 5 to 8 minutes.

Drain the mushrooms, but hold onto the marinade for later. Add the mushrooms to the skillet and cook them for a couple of minutes until they just start to soften.

Throw in the spinach along with a couple of tablespoons of the reserved marinade. Turn the heat down to medium-low and let everything cook together gently for about 20 minutes, stirring now and then.
