Directions
Place the split peas in a large bowl and covering them with about 6 cups of cool water. Let them soak for at least 8 hours or overnight, then drain and rinse well. Next, pour the chicken broth and 2 cups of water into a big pot and turn the heat to high. Add in the ham, chopped red onion, soaked peas, brown sugar, garlic, black pepper, and a pinch of salt. Bring everything to a boil, then lower the heat and let it simmer gently. Cook until the peas are really soft, which usually takes around 2 hours. Once itβs done, give it a taste and adjust the seasoning if needed before serving.
