Directions
Heat some oil in a skillet over medium-high heat, then add the chicken. Cook it until it’s nicely browned on all sides. Next, toss in the onions and cook everything together for another couple of minutes until the onions start to soften. Bring the mixture to a boil, then lower the heat to medium, cover the skillet, and let it simmer for about 15 minutes. Cook until the water has been absorbed and the rice is tender.
