Why This Recipe Is So Tasty
Best Cooking Tips
- Use a low simmer and stir occasionally to prevent sticking.
- For extra creaminess, cook the oats in part coconut milk and part water.
Step 1
Pour the pineapple juice from both cans into a measuring cup, then add enough water to make 3 cups total. In a saucepan, combine the pineapple juice-water mix with the coconut milk and regular milk, and bring it all to a boil. Once boiling, lower the heat to medium-low and stir in the steel-cut oats along with a pinch of salt. Let the oats cook, stirring now and then, until theyβre tenderβthis usually takes about 20 minutes. If the oats seem dry at any point, feel free to add a little more water.
Step 2
Toss in the pineapple chunks, shredded coconut, brown sugar, flax seeds, vanilla extract, and a bit of ginger. Keep cooking everything together until the brown sugar melts and the pineapple is warmed through, which should take around 10 minutes. Give it a taste and adjust the sweetness if you like, then serve warm and enjoy!
