Chef Tips
- Use fresh pearl onions if possible, but frozen ones work well too and save time.
- Simmer gently to keep the chicken tender and to let the spices fully infuse the stew.
Step 1
Gently heat some olive oil in a large pot over medium heat. Toss in the celery, chopped onion, and bell pepper, and cook them gently, stirring occasionally, until they’ve softened—this should take about five minutes. Then add the garlic and cook for another minute until it smells really fragrant.
Step 2
Pour in the vegetable broth, then add the tomatoes, carrots, potatoes, pearl onions, and thyme. Season with a bit of salt and pepper. Bring everything to a boil, then lower the heat and let it simmer until the veggies are nice and tender, about 20 minutes.
Step 3
Stir in the chicken along with the red pepper flakes, and cook until the chicken is heated through—this usually takes five to ten minutes. Just before you’re ready to serve, splash in some vinegar to brighten up the flavors.
