Helpful Cooking Tips
- Cook on low heat to ensure the meat becomes tender and absorbs the flavors.
- Stir occasionally to prevent the sauce from sticking to the bottom of the pot.
Step 1
Heat some oil in a large pan over medium-low heat. Toss in the whole spices and let them sizzle for about a minute. Then add the chopped onions and cook until they start to soften, about 1-2 minutes.
Step 2
Stir in the ginger-garlic paste and cook for another minute. When the onions begin to brown, add the chicken and cook, stirring often, for 5-7 minutes until the chicken turns white. Season with salt and mix well.
Step 3
Cut 400g of tomatoes in half and place them skin-side up on top of the chicken. Cover the pan and let the tomatoes cook until theyβre soft and tender.
Step 4
Once tender, peel off the tomato skins, stir everything together, and cook for another 3-4 minutes. Then add the yogurt and cook until the mixture thickens and looks a bit dry.
Step 5
Sprinkle in the coriander, cumin, chili, turmeric, and pepper powders. Give it a good mix, then add the green chilies and stir again.
Step 6
For that smoky finish, heat a piece of charcoal until red hot, drizzle a little oil on it, and place it in the pan. Cover and let it sit for a few minutes to absorb the smoky flavor.
Step 7
And thatβs it! Your delicious chicken Shinwari is ready to enjoy.
