Directions
Put the potatoes, water, broth, and garlic into a pot. Bring everything to a boil, then lower the heat to medium-low and let it simmer until the potatoes are nice and tender, about 15 minutes. Once they’re soft, drain the potatoes, but don’t toss the cooking water—set it aside for later. Put the potatoes back in the pot and stir them over medium heat for about a minute to let any extra moisture evaporate. Take the pot off the heat, then slowly add some of the reserved cooking water and rice milk, alternating between the two as you stir vigorously. Keep going until the potatoes are creamy but not too soggy, and there’s no pooling liquid left in the pot.
