Step 1
Lin a baking sheet with parchment paper. Peel the bananas and slice them up, then spread the slices out on the sheet. Pop them in the freezer for about an hour until they’re nice and firm. While that’s happening, toss the strawberries into a blender and pulse a few times—you want them blended but still a little chunky. Pour this strawberry mixture into a bowl and set it aside.
Step 2
Add the frozen banana slices, tahini, vanilla extract, and brown sugar to the blender. Blend everything until it’s smooth and creamy. Now it’s time to assemble the pops. Spoon a little of the strawberry mixture into the bottom of each mold, about a quarter full. Then fill the rest of the way with the banana-tahini blend, leaving some room at the top. Sprinkle some mini chocolate chips over each one, stick in the popsicle handles, and freeze for at least four hours until they’re completely solid.
