Step 1
Heat your oven to 375ยฐF (190ยฐC). Line an 8x8-inch baking pan with parchment paper, leaving some extra hanging over the sides to help lift the bars out later. Give the parchment a light spray of cooking oil to keep things from sticking.
Step 2
In a big bowl, mix together the oats, whole wheat flour, coconut, almonds, ginger, and salt. Add the melted butter, maple syrup, and vanilla, then stir everything until itโs well combined. Set aside about a cup of this mixture for the topping, and press the rest firmly and evenly into the bottom of your prepared pan.
Step 3
In another bowl, toss the strawberries with the orange juice, orange zest, cornstarch, and a bit of maple syrup. Mix until the cornstarch is fully dissolved and there are no dry spots. Spread this fruity mixture evenly over the crust.
Step 4
Sprinkle the reserved oat mixture on top and gently press it down a little so it sticks to the fruit. Pop the pan in the oven and bake for 45 to 50 minutes, until the top turns golden and you see the strawberries bubbling.

Let the bars cool completely in the panโthis helps them set up nicely. Once cooled, use the parchment overhang to lift the whole thing out and slice into bars. Enjoy!
