Why This Recipe Is So Enjoyable
Cooking Hints
- Stir the granola halfway through baking to ensure even browning.
- Let the granola cool completely to achieve maximum crunch.
Step 1
Gently heat your oven to 325°F (165°C) and line two baking sheets with parchment paper. In a large bowl, mix together the oats, amaranth, sunflower seeds, pecans, walnuts, almonds, flaxseed meal, and ground chia seeds until everything is well combined.
Step 2
In a saucepan over medium heat, combine the honey, maple syrup, coconut oil, brown sugar, butter, vanilla extract, cinnamon, and salt. Stir constantly as it comes to a boil, then keep stirring and cook for about a minute before taking it off the heat.
Step 3
Pour this warm syrup mixture over the oat and seed mix, stirring until it’s all nicely coated. Spread the granola evenly across your prepared baking sheets. Pop them in the oven and bake for around 20 minutes, giving the granola a good stir halfway through to toast it evenly.
Step 4
Once it’s golden and fragrant, take the granola out and let it cool for about five minutes. Transfer it to a big bowl, then toss in the raisins, cherries, and blueberries. Give everything a good mix, and you’re ready to enjoy!
