Step 1
Gently heat your oven to 400°F. Give the sweet potatoes a good scrub, then pop them in the oven whole with the skin on. Roast them for about 40 to 45 minutes, or until they feel nice and soft when you squeeze them gently. Once they’re cool enough to handle, slice off the top third of each potato and scoop out the inside into a bowl, keeping the skins if you want to use them for serving.
Step 2
Mash the sweet potato flesh with a fork, then stir in some yogurt and your favorite spices, including a touch of cinnamon. Mix everything together until it’s well combined. You can spoon this mixture back into the sweet potato skins or divide it into lightly buttered ramekins. Sprinkle a teaspoon of brown sugar on top of each one for a little sweetness.
Step 3
Pop them back in the oven and bake for another 15 to 18 minutes, until they’re warmed through and the sugar has melted into a nice topping. Enjoy!
