Cooking Hints
- Roast the squash halves cut-side down to help caramelize the sugars evenly.
- Use a sharp knife to carefully cut the squash to avoid slipping.
Directions
Cut the squash in half and place the halves cut side up on a microwave-safe plate. Drop about 2 tablespoons of butter and 2 tablespoons of brown sugar into the hollow of each half. Pop them in the microwave and cook on high for 8 to 10 minutes, stopping a couple of times to rotate the squash so it cooks evenly. When the flesh feels soft and tender, use a spoon to scoop it out along with the melted butter and sugar. Give it a gentle mash to mix everything together. You can serve it right in a bowl or spoon it back into the squash shells for a fun presentation.
