Cooking Techniques
- Cook the sausage thoroughly before adding the vegetables to ensure full flavor.
- Avoid overcooking the zucchini noodles to keep them tender but still slightly crisp.
Step 1
Bring a pot of lightly salted water to a boil. Once boiling, add the zucchini noodles and cook them for about 3 minutes until they’re tender but still have a little bite. Drain them well and set aside.
Step 2
Meanwhile, heat a tablespoon of olive oil in a skillet over medium heat. Toss in the green bell pepper and onion along with some seasoned salt and a pinch of sea salt. Cook everything for about 3 minutes, stirring occasionally. Then add the chicken sausage, breaking it up if needed, and cook until it’s nicely browned, around 4 to 5 minutes.
Step 3
Stir in the spinach, fresh basil, and garlic paste. Season with a bit more salt to taste, and cook until the spinach has wilted, which should take 2 to 3 minutes.
Step 4
To serve, place the zucchini noodles on a plate, drizzle with the remaining tablespoon of olive oil, and sprinkle a little sea salt over them. Spoon the sausage and veggie mixture on top, add the tomatoes, and finish with a generous sprinkle of Parmesan cheese. Give everything a final seasoning with salt and pepper if needed, and enjoy!
