Step 1
Warm your oven to 425Β°F (220Β°C). Pour some olive oil into a bowl and use it to lightly coat both sides of each chicken breastβset them aside once they're covered. Pour the rest of the olive oil into a 9x13-inch glass baking dish, then stir in 2 tablespoons of sweet hot mustard.
Step 2
Spread about a tablespoon of that mustard mixture on one side of each chicken breast. Sprinkle them with garlic and herb seasoning and a bit of pepper. Place the chicken in the baking dish with the mustard-coated side down. Flip the breasts over and season the other side as well.

Scatter chopped onions and garlic around the chicken in the dish, and donβt forget to toss any leftover pieces on top. Pop the dish into the oven and bake until the chicken is cooked through and no longer pink inside, roughly 30 minutes. To be sure, check that the internal temperature hits 165Β°F (74Β°C).

Once itβs done, cover the dish loosely with foil and let the chicken rest for about 10 minutes before serving. This helps keep it juicy and flavorful!
