Step 1
Make the BBQ sauce: combine the tomato sauce, brown sugar, mustard, vinegar, chopped onion, chili powder, and garlic in a small saucepan. Bring it to a boil, then lower the heat and let it simmer gently for about 5 minutes, stirring now and then. Once it's ready, take it off the heat and set it aside.

Heat some oil in a large pan over medium-high heat. Add the pork and cook it for about 5 minutes, turning occasionally, until itโs nicely browned all over. Scoop the pork out and set it aside for now.

In the same pan, toss in the chopped onion with a pinch of salt. Cook it for around 4 minutes until it softens up, stirring occasionally. Then stir in the BBQ sauce you made earlier, the browned pork, undrained tomatoes, black beans, kidney beans, and broth.
Step 4
Bring everything to a boil, then cover the pan, reduce the heat, and let it simmer for about 10 minutes, stirring now and then, until the pork is tender and all the flavors come together.
Step 5
Serve the chili warm with a dollop of sour cream and a sprinkle of fresh parsley on top. If you like, warm up some cornbread on the side to complete the meal.
