Why This Recipe Is So Flavorful
Better Cooking Tips
- Layer ingredients evenly to ensure every bite has a good mix of flavors.
- Cover the casserole with foil while baking to keep it moist, then remove the foil near the end to brown the top.
Step 1
Cook the yellow rice according to the package instructions, then set aside 1 1/2 cups for the casserole. If you have any extra rice, pop it in the fridge for another meal. Preheat your oven to 375°F and lightly spray a 9x13 inch baking dish with cooking spray.
Step 2
Place 4 tortillas flat on the bottom of the dish to form a base. Next, whisk together the mustard, sour cream, and 1/3 cup honey in a small bowl to make a sweet and tangy sauce. In a large bowl, mix the red and green peppers, garbanzo beans, black beans, and corn. Take out about half a cup of this bean mix and set it aside for topping later.
Step 3
Add the cooked chicken, mozzarella, cheddar, cumin, the reserved yellow rice, and the honey sauce to the big bowl with the beans. Stir everything together until well combined, then spread this mixture evenly over the tortillas in your baking dish. Lay 4 more tortillas on top, sprinkle the remaining mozzarella and cheddar cheese over them, and scatter the reserved bean mixture evenly across the top.
Step 4
Pop the casserole into the oven and bake for about 30 to 45 minutes, until everything is hot and bubbly. If the top starts to brown too much, just cover it loosely with foil. When it’s done, take it out and drizzle the last 2 tablespoons of honey over the top for a nice finishing touch. Let it cool for a few minutes before serving.
