Step 1
Melt the butter in a saucepan over medium heat. Once melted, stir in the honey, brown sugar, and coconut. Let the mixture come to a boil, then take it off the heat and let it cool for a few minutes. Pour the sauce into a large bowl, add the salmon, and turn it gently to coat all sides. Cover the bowl and pop it in the fridge to marinate for at least half an hour.

When youβre ready to cook, preheat your oven to 375Β°F (190Β°C). Spread some of the marinade on the bottom of a baking dish to keep things flavorful and prevent sticking. Arrange the salmon in the dish and spoon some more marinade on top, making sure to get plenty of that tasty coconut on the fish.

Bake the salmon for about 25 minutes, occasionally basting it with the remaining marinade to keep it moist and delicious. The salmon is done when it flakes easily with a fork. If you have any leftover marinade, either toss it or bring it to a boil for a few minutes and drizzle it over the cooked salmon before serving.
