Step 1
Lightly heat your oven to 300Β°F (150Β°C) and lining one or two baking sheets with parchment paper. In a medium saucepan, melt together the butter, brown sugar, turbinado sugar, maple syrup, and honey over low heat. Keep stirring gently until the mixture starts to simmer, then let it bubble away on low for about 4 to 5 minutes. Take it off the heat, then quickly stir in the vanilla and baking sodaβbe ready for it to foam up a bit.

Pour your popcorn into a big warm bowl, and slowly drizzle the caramel sauce over it while stirring with a sturdy spoon. Take your time so you coat everything evenly without burning your fingers. Spread the coated popcorn out on the prepared baking sheets, splitting it between two if it looks like too much piled up.

Pop the trays into the oven and bake for around 40 minutes, but every 10 minutes, pull them out and give the popcorn a good stir to keep it from sticking and help it crisp up nicely. Once itβs done, let the popcorn cool right on the trays set on a wire rack for about 15 minutes. Then, enjoy your sweet, crunchy treat!
