Step 1

Lightly heat your oven to 350°F (175°C) and lightly grease a 9x13-inch baking dish. Peel and chop the sweet potatoes, then put them in a large pot with enough water to cover. Bring it to a boil and cook until the potatoes are tender when poked with a fork, about 10 minutes. Drain and let them cool a bit.

Step 2

While the potatoes are cooling, mix together the brown sugar, cinnamon, ginger, nutmeg, and a pinch of salt in a bowl. Stir in the cashews so they’re evenly coated with the spices and sugar.

Step 3

Now, layer half of the sweet potatoes in the bottom of your baking dish. Sprinkle half of the brown sugar and cashew mixture over them, then dot with half the butter. Repeat with the remaining sweet potatoes, topping mixture, and butter pieces.

Step 4

Pop the dish in the oven and bake for about 30 minutes, until everything is nicely glazed and bubbling. Then scatter mini marshmallows on top and bake for another 5 minutes or so, until they’re golden and toasted. Let it cool slightly before serving and enjoy!

Serving Variations

Serve warm as a main dish alongside a fresh green salad or steamed vegetables. It also works well as a side for grilled meats or roasted chicken, adding a sweet and nutty contrast.
