Pok holes all over the sweet potato and microwaving it on a plate until it’s completely soft, about 8 to 10 minutes. Let it cool just enough to handle, then cut it in half and scoop the flesh into a bowl. While it’s still warm, mash it up well. Stir in the egg, goat cheese, black pepper, cayenne, and salt until everything’s combined. Add the flour and mix it in with a spatula until the dough comes together and there are no dry spots. Wrap it up in plastic and pop it in the fridge for at least an hour to firm up.

When you’re ready, melt the butter in a pan over medium heat and toss in the bacon. Cook it, stirring occasionally, until the bacon starts to get crispy, about 3 to 5 minutes. Shape the dough into dumplings and fry about five at a time in the bacon butter, letting them cook until they’re golden and crusty on each side—around 3 minutes per side. Serve the dumplings warm with a drizzle of that delicious bacon butter on top.
