Step 1
Heat a teaspoon of olive oil in a medium pan over medium-high heat. Add the ground sausage and cook it, stirring occasionally, until itโs nicely browned, about 5 to 7 minutes. While the sausage is cooking, bring a large pot of water to a gentle simmerโjust a few inches of water is enough.

Once the water is simmering, crack the eggs one at a time into a small cup or ramekin. Stir the water gently to create a whirlpool, then carefully slide the eggs in one by one. Let them poach for about 3 minutes until the whites are set but the yolks are still soft. Use a slotted spoon to lift the eggs out and set them on some paper towels to drain.

While the eggs are poaching, spiralize your sweet potato into noodles. Heat the remaining teaspoon of olive oil in a large skillet over medium heat. Toss in the sweet potato noodles and cook them just until they start to soften, which should take around 5 to 7 minutes. Season with a little salt and pepper.

Once everythingโs cooked, drain any excess grease from the sausage and add it to the skillet with the sweet potato noodles. Give it a good toss along with the salsa to combine all the flavors. Divide the mixture between two bowls, then top each one with diced avocado and a poached egg. Enjoy!
