Step 1
Bring some water and rice to a boil in a saucepan. Once itβs boiling, lower the heat to medium-low, cover the pot, and let it simmer gently until the rice is tender and the water is absorbed, which should take about 20 to 25 minutes.

While the rice cooks, pop the bacon into a large skillet over medium-high heat. Cook it, turning now and then, until itβs nicely browned and crispy, around 10 minutes. Once itβs done, drain the bacon on paper towels but keep the drippings in the skillet. Crumble the bacon into bite-sized pieces.

Warm your oven to 250 degrees F. In a small saucepan over low heat, combine the beans with a teaspoon of taco seasoning and stir occasionally until heated through, about 5 minutes.

Add another teaspoon of taco seasoning to the reserved bacon drippings in the skillet, then toss in the cooked rice. Stir it around so every grain gets coated and warmed through, about 2 to 3 minutes.
