Lightly heat your oven to 350°F (175°C). Lightly grease an 8x8-inch baking dish with some non-stick spray. Cut the spaghetti squash in half and sprinkle about 2 tablespoons of water into each half. Place them cut-side down in a microwave-safe dish and microwave on high for around 10 minutes, or until the squash is tender.

Once it’s cool enough to handle, use a fork to scrape out the squash strands into a mixing bowl. Add in the Parmesan, cream, egg, garlic powder, Italian seasoning, salt, and pepper, then stir everything together until well combined. Pour the mixture into your prepared baking dish and top it with shredded Cheddar.

Pop it in the oven and bake for about 30 minutes, until the top is nice and golden and the dish is set. Let it cool a bit before serving, and enjoy!
