Step 1
Grat about 2 kg of carrots. In a large pan, add the grated carrots along with a few green cardamom pods. Pour in some milk and cook everything together for about 10 minutes.
Step 2
Lower the heat, cover the pan, and let it simmer gently for 30 minutes. After that, give it a good stir, cover again, and cook for another 30 minutes on low heat.
Step 3
Keep stirring every 30 minutes and covering the pan, letting it cook slowly until the milk has mostly evaporated and the carrots are soft.

When the milk has dried up, add a generous spoonful of clarified butter (ghee) and mix it in well.
Step 5
Add sugar to taste and cook until it’s fully melted and combined.
Step 6
Throw in some cashew nuts, almonds, and crumbled khoya. Stir everything together and cook for another 5 to 7 minutes.

Once everything is well mixed and fragrant, your delicious carrot dish is ready to enjoy!
